The phrase "to the moon and back" basically means more than anything or more than anything else. The notion is using the distance from the Earth to the Moon and the return trip (or 455,000 miles or so) as a measure or unit or quantum of (say) love. In short, a lot.
It's like saying "I love you to the moon and back" to mean "I love you really, really, really a lot."
